Fogala, also known as Phogla, is a unique and traditional dry vegetable deeply rooted in Rajasthani culinary heritage, particularly valued for its cooling properties in the region's intense summers. Unlike "foflia" which often refers to dried tinda, Fogala is made from the dried flowers and seeds of the Kapok tree (Ceiba pentandra), also known as the silk cotton tree, which thrives in arid conditions. This desert food, often described as having a millet-like appearance, is traditionally used in a variety of dishes like raita (yogurt-based accompaniment), dhokla (steamed savory cake), or incorporated into flatbreads made with millet flour, showcasing the resourcefulness of Rajasthani cuisine in utilizing native flora for both flavor and health benefits.
