"Sabut Amchoor," literally meaning "whole dry mango," is a widely used and essential dry ingredient in Rajasthani cuisine,reflecting the region's resourceful approach to flavor and preservation. It is made from unripe, green mangoes that are thinly sliced and then meticulously sun-dried until they are completely dehydrated and hard, resembling light brown, woody strips. This traditional process concentrates the mango's natural sourness, making "Sabut Amchoor" a powerful natural souring agent and tenderizer, particularly valued in dishes where a tangy kick is desired without adding moisture.
