"Sirawadi," often synonymous with "Rabodi," is a traditional and highly resourceful dry food product from Rajasthan, born out of the need to preserve ingredients for year-round consumption in the arid climate. While it's used in dishes like a dry vegetable, it's not a direct dried form of a plant vegetable. Instead, Sirawadi is ingeniously crafted from buttermilk and either wheat or maize flour, which are combined, spread thinly, and then meticulously sun-dried into brittle, wavy sheets. This preservation method allows for long-term storage. When ready for use, these dried pieces are rehydrated and cooked into a savory curry (sabzi), providing a unique texture and a tangy flavor profile that is a comforting staple in Rajasthani households, especially during times when fresh vegetables are scarce.
